Text to an email should not automatically turn into

Text to an email should not automatically turn into an mms message. It should be able to stay as an sms so it does not have to opened as an attachment when it arrives.

    I can figure out how to send a text (SMS I
    or MMS). Email addresses don't show up as options to message.
