Can I configure specific notifications bubble colors etc per contact / chat?

Open Textra (Chat List) > Long Press (to enter multi-select mode) choose the Chats you wish to customize > tap 3 dots (top right) > Customize (as per the screenshot below).

Or if just one specific contact, open their Chat, tap the "expand" icon top right, Customize this Chat (as per the screenshot below).

Configure to your liking / preference.
