To summarize:
1) Rename the Conversation by clicking down-arrow on the right edge, then the pencil icon. Call it anything.
2) Hit back to get to the Conversation List, create a new message (text icon in lower right), and type the first couple of letters of the newly renamed Conversation. Select the Conversation from the Conversation List.
3) *NOW* you have what we should've had all along! Click the +(person) icon in the To field and add as many people as you want.Textra Development: PLEASE add the +(person) option to the original, un-renamed Conversation to avoid jumping through so many hoops.

Thanks Anonymous. You're absolutely right. I even missed that subtlety, since I hadn't done this in a while.
The key is to NOT simply select the named conversation from the list in Step 2, but to create a NEW message via the lower right-hand "New Message" button, and type the named conversation's name into the To field. After you select the named conversation you then have the option to add people via the +(person) icon.
And as another Anonymous user stated, this workaround doesn't let you add a SECOND person to a single-person conversation, but will allow you to add a third, fourth, fifth, etc. person to a 2+ person conversation.
We all still hope that Textra will add this functionality natively to an otherwise pretty awesome text messaging app.
